We are a locally owned and independent location. The owners and management are all local Boise natives, where we saw the Treasure Valley grow from under 200,000 people to now nearly 900,000 people. And we’re proud to be part of the community.
We try to source local or regional ingredients whenever possible. From the herbs that top a dish to the mint that bases a cocktail. Because we use rice flour exclusively in most items, several items on the menu can be made gluten free. We even stock gluten free pasta!
Our location was originally approved as a concert house and lounge, bringing local music and entertainment to the community. A group then filed an appeal and the City of Meridian reneged the previously approved permits. We were left with less than a week to pivot the location with a new name, theme, business plan, and concept and The Dalton Royal was born.
